Yields 10 people

To make the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (yields 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Citrus Syrup: Combine the listed items in a pan, heat until it reaches a gentle boil, mixing to dissolve. After that, turn off the stove allowing it to cool fully. Decant to a sterilised bottle, close it and refrigerate it chilled, it will last for around four weeks.

To make Batch Mix: Mix all the liquid ingredients into one big jug, let it rest for an hour, then strain preferably using a fine cloth, making it completely strained.

For serving: Add 85ml from the premix into your stirring glass packed with ice, and agitate lightly for about 60 seconds to cool it down. Filter into a cold coupe glass or similar, decorate with some cranberries and finish by giving it a quick spritz of the essential oil over the top.
